Foodie News: Rockville Pop-Ups, Vino Volo Takes Flight

Quench, a destination cocktail bar in Rockville, is launching a new partnership program to host a series of pop-up restaurants within its walls on Sundays and Mondays to showcase new and upcoming chefs and culinary concepts.

“We’re excited to let our space highlight the visions of other rising culinary stars in the area," said Michael Holstein, owner of Quench. "We started out thinking about the days the restaurant was closed, but it transformed into an opportunity to build some real fellowship with colleagues in the restaurant industry and bring great tastes to our diners in the community." 

The first planned pop-up will take place on Dec. 3, and will be a "Laotian concept" from Chef Donn Souliyadeth, an Arlington native who works as a private chef in the region and has studied in Canada and Switzerland.

"Although he maintains a love for French, Italian and American cuisine, Chef Souliyadeth strives to uphold and honor his culinary roots with cuisine his mother taught him—Laotian fare—which is similar in influence to Thai and Vietnamese food," Holstein said.

Future pop-ups will include a farm-to-table pop-up (in which everything served will come from local farms) and a "Korean concept," said Holstein.

Quench opened on May 22, 2012, in Traville Village Center (9712 Traville Gateway Dr., Rockville), Rockville Patch reported.

Three Sides:

After a week-long delay caused by Hurricane Sandy, Bethesda's newest wine bar, Vino Volo, opened on Friday, Nov. 16, Bethesda Patch reported.

The wine bar originally launched at Dulles Airport in 2005 and later expanded to airports across the country. Now, Vino Volo fans may enjoy the wine bar without the anxiety of being at an airport.

"The restaurant menu will feature dishes already served at Vino Volo locations, including smoked salmon rolls and chorizo and chickpea chili, in addition to other tapas-style and full-sized plates. The atmosphere will remain family friendly," Doug Tomlinson, founder and CEO of Vino Volo, said.

Chop't Salad, an anticipated addition to the Bethesda food scene, opened on Wednesday, Nov. 14, in the Wildwood Shopping Center. On opening day, the eatery offered free food in exchange for donations to a popular local charity, Bethesda Patch reported.

While shopping for the big feast, consider helping out a family in need this Thanksgiving by donating a turkey to Manna Food Center (9311 Gaither Rd., Gaithersburg). Donate turkeys by 3 p.m. on Tuesday, Nov. 20., to help the county's largest food center help more than 300 families this Thanksgiving, Gaithersburg Patch reported.
