Easy Éirinn 'On-the-Go' Brách

If you're in a hurry on St. Paddy's Day, you can still have your corned beef and eat it, too.

 

Do you like to celebrate St. Patrick’s Day in the traditional American way—with corned beef and cabbage, “Danny Boy,” and maybe a little green beer? So do I. I usually remember to wear some green that day to honor my roots and the great grandparents who made the long journey by sea to create a better life for their progeny. I boil my corned beef, but sauté the cabbage with some interesting seasonings. And I love to serve steamed, buttered, “new” potatoes on the side. Not the healthiest meal, but loaded with taste.

Some years I’m so busy I don’t have 3-4 hours to make corned beef, or even the hour to steam the potatoes, but I still want St. Patrick’s Day flavors. And it just feels good to make the gesture—kind of a personal salute to the days and loved ones past. In those years I make delicious Reuben sandwiches. They are quick and easy to make, and contain both corned beef and cabbage, either in the pickled form of sauerkraut or with a modern twist using coleslaw.

Another way to tip my green bowler in a hurry is to give an Irish tweak to the ingredients of this Turkey Pinwheels recipe. Use green wraps or green burrito wrappers found in most supermarket deli sections in place of the usual plain ones. Spread a thin layer of Thousand Island Dressing over the cream cheese. Use chopped cabbage in place of the chopped lettuce, and deli corned beef in place of the turkey.

Whether you celebrate at home, the local pub, or a neighborhood deli, have a happy and safe St. Patrick’s Day. And don’t forget to wear a shamrock pin or some green in your attire.
