Sunday, Sept. 16, is Mexico's Independence Day. It's also National Guacamole Day.
Mexico's Independence Day is Sunday, Sept. 16, and Friendship Heights restaurant Rosa Mexicano is marking the occasion with a special menu. The website of the Presidio La Bahia—a preserved historic Spanish mission in Goliad, TX—explains how the war of independence started: In the early nineteenth century, Mexico, with a little influence from the US and France, began talking about a revolt against Spain. Father Miguel Hidalgo from Dolores, Mexico, was a leader of one of the rallying groups. Hidalgo and his officers were planning a revolt for late fall of 1810. The Spanish people found out about the revolt which led the Spanish Government to order the arrest of Hidalgo and his officers. When Hidalgo found out, he called a meeting at his …

Chef Lukis of Rosa Mexicano offers great grilling advice to Patch readers. One tip: Always marinate.
With school nearly out and summer weather here at last, it's time to fire up the grill. For good grill tips, Chevy Chase Patch went right to the source: Chef Steven Lukis of Rosa Mexicano. Patch: What are your favorite foods to grill at this time of year? Chef Lukis: I love grilling whole fish; it makes for a great centerpiece at any summer cookout. Corn is a perennial summer favorite; I’d recommend grilling after soaking the husk. Peaches are another summer ingredient that tastes great after they’ve caramelized a bit. Serve with vanilla ice cream and a bit of Mexican “canela” (cinnamon)—classic! Patch: What are your grilling tips? Charcoal? Mesquite? What's the best way to set up the grill? Chef Lukis: Charcoal for sure. I like to put my…
