Roasting Squash: An Easy, Seasonal Side Dish

Cut squash in pieces, drizzle with olive oil, season, bake and the squash is ready for eating.

With squash in season, I was really excited to try something new with one of my favorite fall foods. I grew up eating buttercup squash grown in my parents' garden. I found cooking it could be as easy as nuking it in the microwave with some butter, salt and pepper. But as my love for food and trying new things has grown, I was anxious to be a little more adventurous. Roasting squash seemed like a logical next step. It seemed easy enough and would be a perfect seasonal side dish or something to toss in a salad. I used a modified recipe from ehow.com.
